From the Farmer's Market: Spring Onions & Radishes

We do love spring in the Northwest when it finally arrives. Our spring Saturday morning tradition includes a walk up to our favorite market for coffee & chai and then hitting our local farmers market in Proctor.


It's early for much vegetable harvesting given our cooler climate here but the market was full of greens, flowers radishes and spring onions this last weekend.

We picked up a bit of it all. And we created this great fresh grilled spring onion salad using some of our Farmer's market bounty. The taste of grilled spring onions is spectacularly fresh and sweet with the caramelized skin that results from a brush of olive oil on the onions before they hit the grill.We even picked up some more spring onions so we could make this again because it was so good.

Recipe:

Grilled Spring Onion Salad

A couple handfuls of spinach and arugula
5 sliced radishes (using a mandolin makes them super thin and crispy)
3 sliced Persian cucumbers (again using the mandolin makes them nice & thin)
2 fresh spring onions brushed with olive oil
Champagne vinegar and olive oil vinaigrette
Salt & Pepper

Combine salad of greens, radishes and cucumbers. Toss with vinaigrette. Grill spring onions until charred. Serve onion directly over tossed green salad. Sprinkle with salt & pepper.
