Chicken Tikka Masala

Have we mentioned lately how much we love Indian inspired dishes? Well if we haven't we've been reminded just how much we do.

One of our must order dishes any time we go out for Indian, for us that's usually at Gateway to India, is Chicken Tikka Masala. It's love in every bite. Creamy, a bit spicy, moist and scrumptious.

We have made it before for a Supper Club that we hosted but we were both craving it so when we had some friends coming for dinner last weekend we decided it was the perfect excuse to make it again.

We merged a few different recipes but this one from Food & Wine was the basis of what we followed. Actually our friends Lynne & Jim told us about this great recipe APP called paprika that we are having so much fun with. I downloaded this recipe into Paprika. Loving it!

What we love most about Indian dishes are the spices.

The chicken marinates in the spicy yogurt which makes it so tender and moist when it's cooked.

Once the chicken goes into the oven I start the sauce...
made of onions, ginger, garlic, diced tomatoes and heavy cream.

We made some basamati rice in the rice cooker that I threw in with a tablespoon of GHEE (Indian style clarified butter), some cardamon pods and cumin seeds. These additions give the rice that aroma that can't be beat.

We also made our favorite roasted cauliflower with all of the spices as a side dish as well.

It's truly become one of our favorite sides.

The table was set and the Chicken Tikka Masala came our so good!

Truly another perfect comfort meal enjoyed with some great friends.

If you haven't made Chicken Tikka Masala we highly recommend you give it a try. The flavors are superb.
