Paleo Pancakes


When we first found this recipe for Paleo pancakes I have to admit I wasn't fully diggin' the idea. But now I must say Paleo pancakes are one of my favorite weekend breakfast treats.


They are super simple, even more great with some fresh fruit on top. Most often we top them with sliced strawberries and blueberries or on this particular morning we did them with sliced strawberries and mango. Truly a treat. Too be honest we both think they are far better than traditional pancakes made with flour.


They also work great if you make a double batch and save them to use throughout the week too.

Recipe:

Paleo Pancakes (recipe from the Paleo Solution)
2 eggs
1/2 cup unsweetened applesauce
1/2 cup nut butter ( we usually use either almond or cashew...I love them w/ cashew)
1/3 tspn cinnamon
1/4 tspn vanilla extract
coconut oil

Mix all ingredients together (minus the coconut oil) in a bowl. Stir well, until it looks batter like. Next, use a bit of coconut oil to grease a non-stick skillet. Spread the batter into the skillet to form a pancake, then cook over low/medium heat. Flip after 1-2 minutes, being careful they don't burn.

Once you've cooked all of the pancakes serve them with fresh fruit or real maple syrup and unsweetened applesauce.
