Korean Style Pork Tacos

Korean style tacos seem to be all the rage right now. And surprise, surprise this Foodie Couple had yet to try them.


So after scouring our latest food magazines we found a recipe in the September issue of Cooking Light for Soy and Cola Braised Pork Shoulder(recipe linked.) that looked like a must make. G has made a pulled pork recipe in the past using root beer, we figured cola might do that same magic.

We seared the pork shoulder in dutch oven and then removed it.

We created the Korean style sauce. Some our favorite Asian flavors: ginger, sesame oil, hoisin sauce rice wine vinegar and of course lite soy sauce.

After all the yumminess came together the pork went back in the dutch oven and into the oven.

While the pork cooked we decided to keep with the Mexican-Asian fusion and have some our favorite guacamole but instead of tortilla chips we fried some wontons instead.


It seemed like it had been a long time since we'd made our guac. So we made the guacamole first.


Then I set up our night vision frying station outside

(yes, we hate frying in the house so much that I was willing to brave the dark & cold to do the frying of the wontons outside.) So glad we did.

I first just cut some packaged wonton wrapper diagonally.

They fried up in a snap in the peanut oil outside on the side burner. We drained them on some paper towels and immediately salted them.

They were very tasty with the guacamole. Especially being freshly made. Not the strongest vehicle for guacamole but it was a fun attempt to do some "fusion" play.

As G was pulling the pork I matchsticked some cucumber and carrot. Diced some green onion and put out some of G's summer pickled onions.

We also opened a bottle Oregon's Flyover Red by Foris.

The Korean tacos were awesome, a little sweet with a hint of ginger and sesame oil. The veggies gave just the right amount of crunch.

Really, very good. And we enough pork for the rest of the week without a doubt.

G & T's Guacamole Recipe:
2 ripe avocado
1/2 white onion, chopped
1 jalapeno, seeded and diced
1-2 roma tomatoes (depending on size) deseeded, and chopped
1/2 lime squeezed
Salt & Pepper

Mash all ingredients together and enjoy!
